Delicious Easy Peasy Posh chocolate fondants

So my parents are staying for a couple of nights, and I obviously wanted to impress them that I am an independent sophisticated woman lol!

So I made vegetarian meatballs in garden vegetable sauce (my own garden veg woo!) with pasta and green salad (also from my garden yum yum)

Then I wanted to be really fancy and show off my baking skills, so thought I'd make a chocolate fondant.

It is AMAZING I totally recommend it - it is easy peasy simple pimple to make and looks ever so impressive!

RECIPE

Preheat oven to 200C (180C for fan). Grease ramekins and dust with caster sugar.
Melt 100g dark choc (I used 85% cacao) and 100g unsalted butter over saucepan of boiling water, then leave to cool for 5 mins.
Then whisk 2 eggs, 100g caster sugar and 20g plain flour until smooth, then fold in choc mixture.
Pour into ramekins, bake for 12 mins, turn out into bowl and dust with icing sugar.

CAN YOU BELIEVE HOW SIMPLE IT IS!

This is the first time I ever tried it and it was perfect!

We had a scoop of choc ice cream with ours, but you could serve with:
*cream
*fruit coulis
*custard (which is so easy to make just double cream, egg and sugar!)
*chocolate custard

Failsafe chocolate chip cookies

After my burnt banana bread disaster I turned back to my absolute fail safe easy peasy scrummy chocolate chip cookie recipe.

RECIPE
Cream 75g demerera sugar and 75g unsalted butter. Beat in 1 egg. Stir in 150g sifted SR flour and 100g choc chips. Put in small balls on greased tray and press down. Bake at 180C for 10-15 mins.

Told you it was easy!

Other options are changing the sugar to get different textures, or substituting smarties or m+ms etc for the choc chips. They taste AWESOME. Also I have tried:
*putting the mix in a small sponge sandwich tin and making a massive cookie :)
* putting the mix in muffin cases in a muffin tray - makes sexy cookie muffins
*putting the mix onto lolly sticks to make cookie pops
